Juicy Oat Patties with Cheese and Vegetables – An Easy and Healthy Recipe with Oat Bran

Juicy Oat Patties with Cheese and Vegetables – An Easy and Healthy Recipe with Oat Bran

If you are looking for a delicious and unique way to incorporate oat bran into your daily diet, these savory oat patties are a fantastic choice. They are easy to prepare using accessible ingredients and contain no white flour. The result is a soft, juicy interior with a golden-brown crust on the outside. They are perfect for breakfast, a light lunch, or dinner.

Ingredients

For approximately 10–12 patties:

150 g oat bran

2 eggs

150 g yogurt (plain/natural)

120 g white cheese (such as sirene or feta)

1 small zucchini (approx. 200 g)

1 small carrot

1 clove of garlic

1 tsp baking powder

2 tbsp chopped fresh parsley

1/2 tsp paprika

Black pepper to taste

A little salt, if needed

1 tbsp olive oil

Instructions

1. Preparing the vegetables

Grate the zucchini and carrot using a fine grater. Lightly salt the zucchini and let it sit for 10 minutes. Afterward, squeeze it thoroughly to remove any excess water.

2. Preparing the mixture

In a large bowl, whisk together the eggs and the yogurt. Add the oat bran and baking powder. Stir well and let the mixture rest for about 10 minutes, allowing the oat bran to absorb some of the moisture. 3. Adding the remaining ingredients

Crumble the cheese and add it to the mixture, along with the grated vegetables, garlic, parsley, and spices. Mix well until you have a thick consistency suitable for shaping into patties.

4. Shaping

With slightly dampened hands, form small, flat patties. Arrange them on a baking tray lined with parchment paper and lightly brush them with olive oil.

5. Baking

Bake in a preheated oven at 190°C for about 25–30 minutes. Turn the patties over halfway through baking so they brown evenly on both sides.

Tips for perfect results

Squeeze the zucchini well to prevent the mixture from becoming too runny.

Allow the oat bran to absorb the liquid before shaping the patties.

If the mixture is too moist, add another 1–2 tablespoons of oat bran.

For a more pronounced flavor, you can add a little oregano or dried basil.

What to serve with the oat patties?

They are especially delicious with a yogurt-based sauce containing garlic, dill, and a few drops of lemon juice. You can also pair them with a fresh tomato and cucumber salad or roasted vegetables.

Why include oat bran in your diet? Oat bran is a valuable source of dietary fiber, particularly beta-glucans—soluble fibers that support normal digestion and can help maintain healthy cholesterol levels as part of a balanced diet.

It also provides plant-based protein, B vitamins, and minerals. Thanks to its fiber content, oat bran is an excellent choice for adding variety to your daily diet and preparing nutritious meals.
