Ingredients


250 g einkorn grains
1 onion
1 red bell pepper
1 green bell pepper
1 carrot
2 tomatoes (or 200 g canned tomatoes)
150 g white cheese (sirene/feta style)
2 eggs
3 tbsp vegetable oil or olive oil
1 tsp paprika
½ tsp savory (chubritsa)
Pinch of black pepper
Salt to taste
500–600 ml water


Instructions


Wash the einkorn grains thoroughly and soak them for a few hours, preferably overnight. 
Drain the einkorn and boil it in salted water until tender. This usually takes about 30–40 minutes, depending on the grain. 
Heat the oil in a pan and sauté the finely chopped onion, carrot, and peppers. 
Add the tomatoes, paprika, savory, and black pepper. Cook for a few more minutes. 
Add the cooked einkorn and mix well with the vegetables. 
Transfer the mixture to a suitable baking dish. 
Crumble the cheese over the top. 
Beat the eggs and pour them evenly over the einkorn mixture. Bake in an oven preheated to 190°C for about 20–25 minutes, until the dish develops an appetizing golden crust. 
Let it cool for a few minutes before serving.


Tips for delicious baked einkorn

 


For an even richer flavor, you can lightly sauté the pre-cooked einkorn in a little butter or olive oil. Suitable additions include mushrooms, zucchini, spinach, or sun-dried tomatoes.

If you prefer a moister dish, add a few more tomatoes. For a crispier crust, leave the baking dish in the oven for an additional 5 minutes using the top heating element.
