Oatmeal Cookies with Dried Pears and Walnuts

 

Fragrant, crunchy on the outside and pleasantly soft on the inside – oat cookies with dried pears and walnuts are a great homemade breakfast or a healthy afternoon sweet bite. Dried pears add natural sweetness and fruity aroma, and walnuts add a pleasant crunch.

 

Ingredients


150 g oatmeal
100 g dried pears
80 g walnuts
1 well-ripened banana
1 egg
2 tbsp honey
2 tbsp coconut oil
1 tsp cinnamon
½ tsp baking powder
1 tsp vanilla
a pinch of salt


Method of preparation


Cut the dried pears into small pieces. If they are harder, you can soak them for 5–10 minutes in a little warm water, then drain them well.
Mash the banana in a bowl and add the egg, honey and melted coconut oil.
In a separate bowl, mix the oats, baking powder, cinnamon, vanilla and a pinch of salt.
Add the dry ingredients to the banana mixture and mix.
Add the chopped dried pears and coarsely chopped walnuts.
Let the mixture sit for about 10 minutes so that the oats absorb the moisture.
Form small cookies on a baking sheet lined with baking paper.
Bake in a preheated oven at 180°C for about 15–18 minutes, until the cookies are lightly golden.
Let them cool before serving.
