Pork with Dried Dogwood and Red Wine – A Fragrant Homemade Dish

 

Pork with Dried Dogwood and Red Wine is a rich and aromatic dish with an interesting sweet and sour taste. Juicy pieces of pork are combined with dried dogwood, onions and red wine, which gives depth to the sauce. The recipe is suitable for a family dinner and for special occasions.

 

Required products:


700 g pork leg or shoulder
100 g dried dogwood
2 onions
2 carrots
2 cloves of garlic
150 ml dry red wine
250 ml vegetable or meat broth
2 tbsp. oil or olive oil
1 tsp. sweet paprika
1 tsp. thyme
1 bay leaf
salt to taste
black pepper to taste
1 tsp. honey


Method of preparation:


1. Prepare the dried dogwood

Pour the dried dogwood with warm water and leave for about 10–15 minutes. Drain well before using.

2. Seal the meat

Cut the pork into large bite-sized pieces. Heat the fat in a deep pan and fry the meat in batches until browned on all sides.

Remove the meat and set aside.

3. Sauté the vegetables

In the same pan, add the chopped onion and carrots. Cook for 5–6 minutes until softened. Add the chopped garlic and red pepper and stir for a few seconds.

4. Add the wine and meat

Return the pork to the pan and pour in the red wine. Let it boil for 2–3 minutes to evaporate some of the alcohol.

Add the broth, thyme and bay leaf. Season with salt and pepper.

5. Add the dried dogwood

Add the drained dried dogwood and honey. Stir gently and let the dish simmer over low heat for about 40–50 minutes, until the meat is tender and the sauce has thickened.

If necessary, add a little broth during cooking.

 

How to serve pork with dried dogwood?

 

Serve the dish warm with a side dish of your choice. The following are particularly suitable:

mashed potatoes;

baked potatoes;

basmati rice;

bulgur;

homemade bread.

The sauce with dried dogwood and red wine is great for melting with crusty bread.

 

Helpful tip

 

If you use more acidic dried dogwood, the amount of honey can be increased slightly. If you prefer a more pronounced fruity taste, add another 20–30 g of dried dogwood to the recipe.
