Spicy White Bean Stew with Dried Chili Peppers

- 500 g cooked white beans

- 2 tbsp olive oil
- 1 tsp sweet paprika
- 1 tsp smoked paprika
- 1 bay leaf
- 1 tsp dried savory (or thyme)
- Salt and black pepper to taste
- 500 ml vegetable or chicken stock
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and red bell pepper. Cook for about 6–7 minutes until softened.
- Stir in the garlic, sweet paprika, and smoked paprika.
- Crush or finely chop the dried chili pepper and add it to the vegetables. For a milder flavor, remove the seeds before using.
- Pour in the tomatoes and stock, then add the bay leaf and dried savory.
- Stir in the cooked white beans and simmer over low heat for 20–25 minutes.
- Season with salt and black pepper to taste.
- Garnish with freshly chopped parsley and serve with crusty bread.
